In the Western world when we think if autumn we think of family trips to apple orchards. We bring home millions of apples, too many to count, bushel after bushel. Far too many for our mothers to figure out what to do with. With your busy schedule I doubt if apple picking is high on your Fall to do list. But if you’re looking for a sweet memory this apple cake fits the bill. Easy to make and absolutely delicious.
Ingredients

6 sweet apples, peeled and sliced

4 eggs

1 c sugar

1 tsp vanilla

¾ c canola oil

1 c flour
-
2 tsp baking powder
Method

Layer the sliced apples in a square pan.

Combine the remaining ingredients.

Pour the mixture on top of the apples.

Bake at 375 degrees for 1 hour.

Slice into squares and enjoy!
